It’s an Indo-Chinese restaurant in a 5 star hotel, Dave. I wouldn’t wager much on their authenticity but can definitely vouch that their produce is fresh and top-notch. They were the first to bring Peking duck to bangalore, decades ago. Have no clue what wood was used, but it was carved up professionally. They separated and cut the skin first, and then went into the meat. They also make a duck broth soup with all the bones once you’re done with the pancake rolls.
I’ll be giving Yauatcha’s Peking duck the full Dave treatment when I eat there next and will inquire what wood was used - I’m assuming that will be full-on as it’s double the price and the restaurant chain comes with a Michelin flex.
