Along_the_Wire Goat in South East Asia is referred to as mutton. Whereas in the West, mutton is adult sheep and lamb is baby sheep. Not taking anything away from lamb, it’s a good red meat that is obviously quite tender if you get the preparation right. Some of the bits of rendered fat from yesterday’s Mother’s Day celebration, very nice also.
I just think goat/mutton is a tastier meat. But it’s easy to mess up preparation and end up with rubber.
