They’re almost never made to order. Usually cooking in a big batch, and kept warm. Great if your order coincides with a batch coming out the oven, shit if it doesn’t. Few places down here in Brighton part roast them, then finish them to order in a deep-fat fryer. Means they’re good and crunchy, but a bit greasy and with more shared DNA with a chip than a roastie.
Chef friend used to make them to order, but said it was a right ballache as he had to guess how quickly people would order their roast after they’d arrived, and work out when 1 hour before that was - and typically had 10 small trays of roasties in the oven at any time.
