benson I really liked the model at the Hand and Flowers when we were there recently. They build service costs into the price they charge on the menu. No service charge / tip over and above that. I went to Roka for my anniversary and my mate phoned up in advance to buy us a bottle of champagne for the meal as a surprise. They tried to charge him service charge when he paid for it over the phone. Jokers
