Hursty -si- Fair play! We did have a range but now just the standard double over and 4 gas hobs on top. Anyone using electric or induction needs to have a word.
-si- Carrot and swede mash would be an acceptable alternative to a veg side if you don’t like the one on offer, I am not a fan of sprouts. Sweet potato wouldn’t be on my xmas dinner but i am sure others can/do incorporate it.
vinnyt77 Kumquat Agreed. I actually use cold butter, but the result is pretty much the same. Mate of mine runs a Michelin starred restaurant in London. The ingredients for his mashed potato recipe: Potatoes (1kg) Water (2 litres) Salt (49g) Unsalted butter (750g) Outrageously good.
Hursty Lol, ¾ kilo of butter to 1kilo of spuds!! Triple heart bypass required straight afterwards. And anyway, mash potato at a Michelin starred restaurant?!
vinnyt77 Hursty And anyway, mash potato at a Michelin starred restaurant?! Fuck yeah. Uber mash, with brilliantly flavoured roasting juices from a chicken, with grated black truffle. Outstanding… He also has a dish which is basically the world’s best scrambled egg.
Smallman1 There was no mash when I went to Le Manoir Aux Quatre Saisons a few months ago. There was a fucking great bill at the end though.
vinnyt77 Smallman1 My buddy spent 4 years working for Raymond Blanc at Le Manoir, and his mash recipe borrows heavily from RB’s process for pommes purées…
seanc80 Millsy Millsy you still haven’t given us a snapshot of what you might be cooking on your little ‘range’. This tells me everything. I can feel another Replay bootcut/Air Jordan tattoo saga is about to descend, where you give us just a corner of what we might expect on Christmas day and its so fucking shite its laughable.
-si- seanc80 I didn’t even dare to ask him, Sean. All mouth no trousers where the Xmas Dinner thread is concerned. He doesn’t use a microwave and its all done on his range cooker. So it must be tip top.
-si- Most of those top restaurants have a ratio of at least 50%, often more, in terms of how much butter/cream/oil etc they will mix into potatoes to make their mash. Def not an every day side dish!!!!!
seanc80 Millsy So now you are saying that you never use a microwave for reheating anything on Christmas day or even any other day for that matter? Mate I never realised you were such a keen chef. And absolute headbanger.
-si- seanc80 Fuck sake, posting the same things at the same time. Hope your da wasn’t my ma’s milkman.
