Give L-Methionine supplements a try to help with some of the effects of the allergies.
Also try a probiotic supplement which contains only bacteria from these strains: Bifidobacterium infantis, Bifidobacterium longum, Bifidobacterium bifidum, Lactobacillus plantarum. The supplement I take during hayfever season is a combination of just Bifidobacterium longum and Bifidobacterium bifidum. You should probably try taking them already given your general issue with allergies and because the benefits might be cumulative over time.
Also look in to immunotherapy injections for your allergies - I’ve now had 2 of the 3 rounds of injections for grass and tree pollen and they’ve made a massive difference. A round is typically 4-5 injections, once per week, a few months before the season starts. You do that for 3 years.
You’ll likely be needing to give red wine a major swerve going forwards as well.
