Yeah I messed that up. You’re likely right. But it’s currently $25-$30 per pound for a good, prime cut. Here beef is graded on three levels - select, choice, and prime. Select is a hard pass; choice is fine for braises and stews, flank steaks and london broils; prime is essential for something like rib eye, rib roast, tenderloin - but it’s very pricy right now.
I oddly prefer corn-fed beef even if it’s morally questionable and frowned upon flavor-wise by most. Not sure I can even find corn-fed around here anymore.
