seanc80 @bosstrabs - Dublin has an emerging mini-Chinatown area which has obviously alot of Authentic Chinese food and this area is just around the corner from where i work. My knowledge of Chinese food is probably on a par with Smallman’s to be honest in so far as my experience is some what limited past the usual mundanities however i have become rather obsessed with a Pork Szechuan Hot Pot dish that is served up in one of the hostelries. Is this tramps food that’s served in every shithole this side of the Mississippi or Am I heading towards the early stages of my first Traditional Chinese Cook Book ?
bosstrabs seanc80 Sichuan / hot pot is probably the food I know the least about. I don’t really enjoy the hot pot experience compared to proper dining and tend to give it a swerve. Sounds like it could be authentic, hot pot is authentic peasant food (the military used to have it using their upturned helmets with heat under them, no joke).

Along_the_Wire seanc80 Yup. Fondant is just posh mashed potato. I don’t like all the butter, cream and general sloppiness
