Caramelise the onions to sweeten them instead of adding to stuffing mix raw and baking the lot. Breadcrumbs, sausage meat, fresh thyme leaves, finely chopped sage leaves, chopped dried cranberries, salt and pepper. Some lemon zest added too. The sweet cranberries and lemon zest help it cut through all the rich meat and gravy. Not sure if that sounds horrific to most but it makes a magnificent stuffing. Honestly lol
