Worked at a fancy cheese shop in my university years. Two blocks stick in my head. A 10-year Quebec Cheddar that almost knocked us over when we cut the bitch in half; and this round of Stilton that was so fresh is was honestly sweet to the taste. Incredible. I know more about cheese than any straight man should ever know. Those were both tremendous.
