If they were all wired, Iād imagine there would be distance limitation between the artists which would result in feedback from the different mics being in proximity to other instruments, or people tripping over long wires on stage. It also gives freedom to move around.
Latency is largely an issue of the past with modern wireless, but if you purely speaking in terms of quality nothing can beat silver wire as a conductor (unless you cool the wires to very low temps, but that is a bit off the question).
